For a more intense chai flavor, use a high-quality chai concentrate or brew a very strong cup of chai tea and allow it to cool completely before adding it to the dough. If you don't have chai concentrate, you can substitute with 1 1/2 teaspoons of chai spice blend (cinnamon, cardamom, ginger, cloves, and nutmeg). For a chewier cookie, slightly underbake them. They will continue to set as they cool. Store the cooled cookies in an airtight container at room temperature for up to 3 days.
