Follow The Directions

01

Step

In a bowl, combine 2 cups water, chopped almonds, and a pinch of salt. Allow the mixture to sit for at least 8 hours, or preferably overnight, to soften the almonds. (8+ hours)

02

Step

After soaking, drain and rinse the almond mixture thoroughly, repeating the rinsing process twice to remove any excess salt and impurities.

03

Step

Transfer the drained almonds and the remaining 2 cups of fresh water to a high-powered blender. Blend until the mixture achieves a smooth and creamy consistency, approximately 2 minutes.

04

Step

Pour the blended almond mixture into a large mixing bowl.

05

Step

Preheat your oven to 350 degrees F (175 degrees C). Grease an 11x15-inch baking dish with cooking spray to prevent the bars from sticking.

06

Step

Add the flour, chocolate chips, olive oil, chia seeds, honey, powdered peanut butter, cinnamon, vanilla extract, and remaining 2 teaspoons of salt to the almond mixture. Mix thoroughly until all ingredients are evenly combined, forming a cohesive dough.

07

Step

Transfer the prepared dough to the greased baking dish. Use a fork or spatula to evenly spread and level the dough across the entire surface of the dish.

08

Step

Place the baking dish in the preheated oven and bake for 30 to 40 minutes, or until the bars are cooked through and have a lightly browned surface. (30-40 minutes)

09

Step

Remove the baked bars from the oven and allow them to cool in the baking dish for at least 10 minutes before cutting them into individual bars.

For a richer flavor, toast the chopped almonds lightly before soaking.
If you don't have powdered peanut butter, you can substitute it with regular peanut butter, but reduce the amount slightly to adjust for the added fat content.
Feel free to experiment with other spices, such as nutmeg or cardamom, to customize the flavor profile of the bars.
Store the cooled bars in an airtight container at room temperature for up to a week, or in the refrigerator for longer storage.
