In a food processor or blender, combine rhubarb, 1/4 cup water, and salt. Blend until the rhubarb is finely chopped. (5 minutes)

Line a jug with cheesecloth. Pour the blended rhubarb mixture onto the cheesecloth. Gather the edges of the cheesecloth and squeeze out all the juice from the rhubarb, discarding the pulp. (10 minutes)

Squeeze the juice from the limes into the jug and mix thoroughly. Pour in the ice-cold water and stir everything together with a large wooden spoon. Taste and adjust sweetness with more maple syrup if needed. Refrigerate the rhubarb limeade until ready to use. (5 minutes)

To make slushies: For each serving, combine 3/4 cup of rhubarb limeade with about 1 cup of ice in a blender. Blend until you reach your desired slushy consistency. (3 minutes)

For a smoother slushy, consider freezing the rhubarb limeade in ice cube trays before blending.
Adjust the amount of maple syrup to suit your personal preference for sweetness. The tartness of the rhubarb and limes can vary.
