Follow The Directions

01

Step

Preheat the oven to 350 degrees F (175 degrees C). Spray an 8x8-inch baking pan with cooking spray and set aside. (2 minutes)

02

Step

In a medium bowl, combine almond flour, sweetener, melted butter, and almond extract for the crust. Mix well. Reserve 1/3 of this mixture for the streusel topping. Press the remaining 2/3 of the mixture into the prepared baking pan to form the crust. (5 minutes)

03

Step

Bake in the preheated oven until the crust is partially golden, approximately 5 minutes. Remove from the oven and set aside. (5 minutes)

04

Step

In a small saucepan, combine cranberries, sweetener, orange juice, orange zest, and arrowroot powder. Bring the mixture to a boil over medium heat, then reduce the heat to medium-low. Simmer until all the cranberries have burst, about 10 minutes. Remove from heat and let cool slightly for about 5 minutes. (15 minutes)

05

Step

Spread the cranberry filling evenly over the partially baked crust. (3 minutes)

06

Step

In the bowl with the reserved crust mixture, add the chopped pecans and ground cinnamon. Stir until well combined, creating the streusel topping. Sprinkle the streusel topping evenly over the cranberry filling. (5 minutes)

07

Step

Return the pan to the preheated oven and bake until the streusel topping is set and golden brown, about 30 minutes. Remove from the oven and let cool completely in the pan before cutting into bars. (60 minutes)

For a richer flavor, toast the pecans lightly before chopping.
If you prefer a less tart flavor, add a bit more sweetener to the cranberry filling.
These bars can be stored in the refrigerator for up to 5 days. Let them come to room temperature before serving for the best flavor and texture.
