Microwave on High for 1 minute 30 seconds. Remove and stir. Microwave for an additional 1 minute, or until sugar is fully dissolved. (Microwave time: 2.5 minutes)

Stir in the SunButter until the mixture is smooth and completely combined. (Prep time: 1 minute)

Gently fold in the crispy rice cereal until evenly coated. (Prep time: 2 minutes)

Press the mixture firmly into a greased 9x13-inch baking pan. (Prep time: 3 minutes)

In a separate microwave-safe bowl, combine the chocolate and butterscotch chips. (Prep time: 1 minute)

Microwave on High for 1 minute. Remove and stir. Microwave for another minute, or until the chips are completely melted and smooth. (Microwave time: 2 minutes)

Pour the melted chocolate mixture over the cereal base and spread evenly. (Prep time: 2 minutes)

Let cool completely at room temperature, or refrigerate until the chocolate is firm. (Cooling time: 30 minutes - 1 hour)

For an extra layer of flavor, try adding a pinch of sea salt to the melted chocolate mixture.
If you don't have a microwave, you can melt the sugar, corn syrup, and chocolate/butterscotch on the stovetop over low heat, stirring constantly.
Make sure to grease the pan well to prevent the Scotcheroos from sticking.
For a richer flavor, use dark chocolate chips instead of semi-sweet.
