Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate; crumble bacon. (15 minutes)

Transfer potato mixture to a large bowl and toss with bacon, green onions, parsley, and remaining 2 tablespoons balsamic vinegar. Serve warm or cold. (5 minutes)

For a vegetarian option, omit the bacon and add a sprinkle of smoked paprika to enhance the smoky flavor.
Feel free to experiment with different types of potatoes, such as red potatoes or fingerling potatoes.
If you prefer a sweeter dressing, add an extra tablespoon of honey or maple syrup.
This salad is best served immediately, but it can be stored in the refrigerator for up to 3 days.
